Cup Cakes Top Moulds
Many cake decorators enjoy making and decorating cup cakes – the latest cake fashion. But – when the order comes in for 100 – you realize that’s a lot of baking, icing, and flower making etc. Our new moulds help you by doing several jobs in one go. By using our moulds, you have the decorated cup cake top in one easy action.
You can either use sugarpaste with CMC (tylo) powder added, modelling paste (equal quantities of sugarpaste and flower paste), or marzipan. Sugarpaste on its own is often too soft to use in a mould – it can stick or distort when removing. Because you are decorating cakes with a short shelf life, the firmer icing should not dry too hard within the time from decorating to eating.
How to use the moulds.
- Spread a little apricot jam or buttercream on top of cake.
- Dust mould with cornflour, turn over and tap out excess.
- Knead approximately 30g of modelling paste into a smooth ball. Press into mould firmly in the centre to get the fine detail and then press out to edges of mould. Turn over and flex slightly to remove.
- Place icing on top of cup cake. Rub dust colours into brushes on kitchen paper so there is no loose powder. Colour as required.
IDEAS
Each mould can be used without the cake top part – ie you can mould just the rose from the cup cake rose mould and use to decorate larger cakes.
Add your own finishing touches, butterflies, blossoms, piped dots etc to vary the designs.

The Cup Cakes.
For my cup cakes I have used a basic sponge recipe:
2 eggs, 100g each of self raising flour, castor sugar, soft margarine.
Beat together in a food mixer / processor until light and fluffy.
Place cake cases in baking tins (I have used Wilton silver or gold cake cases 2in diameter across base from Knightsbridge PME).

Depending on which cake tray you use ie muffin tins will give you different width cakes across the tops
Bake in a pre-heated oven gas no.6 or electric 200 degrees for approximately 20 minutes. Check after 10 minutes and if cakes look as though they are rising too quickly, lower the temperature slightly and bake a little longer.
Remove from oven and cool. If tops of cakes are too high, they can be trimmed before decorating.
