Karen Davies: Cake Decorating Magic Sparkles

Magic Sparkles have been used in each of the books. They give your decorated cakes a pretty yet modern finish. They can be used straight from the pot as large flakes or ground finer to a glitter. When displayed under light they have a multicoloured diamond effect. They are edible and made from G.M. free ingredients unlike other glitters used for cake decorations.

Magic Sparkles are soluble and will dissolve on contact with wet surfaces.

To attach to icing the surface should be tacky but not wet. Preferably use edible glue made from Tylo (CMC) powder spread very thinly. Alcohol or water can be used but will dry quicker than glue. The sparkles can be ground finer with a spoon handle whilst still in the pot or in a pestle and mortar.
